The Adidas Stabil S, the parent of the Stabil 7 but predecessor of the Stabil Carbon, is typically described as an unsatisfying middle ground between the two, at least as fencing shoes go. It isn't really any different in features or performance over the Stabil 7, which is still available, and has generated some negative reviews on the subject of its production quality and overall lifespan. I wouldn't really suggest going for a Stabil S unless all of the Stabil 7s are no longer available, or unless you wish to bump up the price tag and quality level a bit and go for a Stabil Carbon.
The Stabil S is are not a fencing shoe, but a court shoe designed for volleyball, racquetball, and squash, but the Stabil line has been a staple in the Epee community for a while. Its wide base, but thin sole allows for great stability and quick movement changes. Its sole is designed for lower-friction courts, which translates well towards fencing, both on a strip and in recreational areas commonly used for fencing (basketball courts, for example).
